Marinades and sauces transform ordinary grilled meats and seafood into barbecue of the highest distinction. These are liquid seasonings—a mixture of herbs, spices, aro- matic vegetables (such as garlic, onions, and peppers), and flavorful liquids (such as olive oil, lemon juice, vinegar, and yogurt). The essence of a marinade is its wetness: The meat acquires its flavor by means of soaking.
