Peanutty Baby Pork Ribs

The peanut sauce gives the ribs a great lip-smacking factor. The recipe is easy to do and has some key ingredients like peanut butter, coconut milk, and ginger, which makes the ribs out-of-the-ordinary and very tasty.

You’ll Need
4 racks baby back pork ribs (about 10 pounds)

Rub
2 tablespoons brown sugar
1 tablespoon black pepper
1 tablespoon ground ginger
1 tablespoon salt
1/2 teaspoon dry Chinese mustard

Sauce
2 cups creamy peanut butter
1 cup coconut milk
2 pressed garlic cloves
2 tablespoons soy sauce
2 tablespoons lime juice
1 tablespoon minced fresh ginger
1 tablespoon brown sugar

Garnish
4 tablespoons fresh, chopped cilantro


1. Remove skin from the backs of the ribs.

2. Combine all the ingredients for the rub. Sprinkle it on ribs and massage into meat. Let sit in the refrigerator for at least 1 hour.

3. Prepare grill for indirect cooking.

4. Combine all the ingredients for the sauce.

5. When ready to grill, pat ribs with paper towels and place on rack. Cook until tender, 1 1/2 to 2 hours. During the last 30-40 minutes, baste ribs with peanut sauce periodically.

6. Garnish with fresh cilantro and serve.

Serves 6-8
