And what goes better with Grilled Coon Dog than a Beverly Hill Billies Tennessee Whiskey Glaze? The answer is that there is nothing better, my friends. I can't remember who gave me this sauce. I've had it in the pantry for a long time now...

LOL.... Thanks, guys and gal..... Sorry for the creepiness, Seattle. My wife was creeped out too... I have a sick, warped sense of humor.... My dogs are just fine though....actually, they both got a small bone from the cornish hen.... They were fine with being actresses in this beagle horror film.

Dyal, sometimes things just take time to register... I really like the way you spatchcocked your "dog." Rather than cutting out the backbone, you crosscut it the other way. Great idea, supercool!

Thanks a lot, beercuer! I got that idea from the pepperpilot app. It was more fir novelty purposes and quicker cooking. I prefer spatchcocking for more flavor and ease of eating... If you spatchcock the chicken, you eliminate the bones and membrane in the cavity, allowing you to get the spices directly on the meat.

It also helps the meat cook more evenly too, and it's the only way to dress a bird (or coon dog) if you want to cook it under a brick too. Plus, it gives you more bones for homemade stock.
