When barbecuing do you always put down the lid (on a gas barbecue) or do you only put it down when cooking bigger things? e.g. if I am cooking a few eggplant slices and a few chicken breasts should I put down the lid when cooking - or should I only put down the lid while waiting for the barbecue to get hot.
