I have a 7lb pork shoulder and two racks of ribs that I will be smoking in my brinkman smoker (first time smoking both at the same time). I am assuming that ribs on my rib rack and the pork shoulder will not all fit on the top grate. Does any body have any ideas about how to mop my shoulder every hour in the middle rack and my ribs on the to rack with out removing the top rack , loosing heat etc. etc. or do I not need to mop my shoulder every hour?
