HPBA SHOW 2012

PART 1: WHAT’S NEW IN THE WORLD OF BARBECUE?

Steven recently attended the annual HPBA (Hearth, Patio, and Barbecue Association) Show in Atlanta, Georgia. Here are some of the grills that caught his eye among the ones being shown by 400 exhibitors.
Above is the Cook-Air wood-burning grill from Canada. This small portable grill puts out bigger-than-life flavors thanks to a battery-powered blower mechanism that enables it to reach searingly hot temperatures up to 800 degrees. A dome-shaped cover allows you to lightly smoke the food, if desired.

Bet you’ve never seen one of these–the Carson Rotisserie developed by Blake Carson, pictured above. Blake, a Memphis boy, went to Brazil as a boy to develop his soccer skills and came back with an abiding love of churrasco, which involves spit-roasting a variety of meats over a charcoal or wood fire. (If you’ve been to a Brazilian steakhouse, you understand the concept.) What’s particularly ingenious about this system is that it folds up like a suitcase, so it’s completely portable.

Bon-Fire mobile kitchen. The Danes may be famous for their futuristic design, but the Bon-Fire offers the timeless pleasure of cooking over an open wood fire.
You can build a campfire under the tripod on a raised platform or on the ground.
