I went from using charcoal briquettes to whole logs sawed into chunks. That's made a big difference. I added fuel till I reached the point where I had to use my damper to cool it. I was using indirect heat in the main chamber itself.
At one point the fire was too hot with the vent almost completely closed. So I moved some of my coals over to the side firebox. That gave me all of the smoke of a bigger fire with the temp range I wanted.
I'm no where near being a true pit-boss. But I'm startin to get the hang of this thing.
If it aint broke, Break it!
Then rebuild it better.
