Thanks for the help guys, if I had cooked it the way I planned, I'd have had one heck of a big piece of jerky on my hands. It will be grill bound at 6:00 am Sat. morning. At the end of the day maybe my wife will believe what I told her long ago: Cooking is little more than science. Grilling, however, pure art. Thanks to fellow artists like yourselves we all grow with the grill.

Oh, by the way, gas vs. charcoal? C'mon, go prehistoric! WOOD BABY!!!!!!!!!!

I would like...no, I want...no wait; I NEED a 24-30 inch vertical smoker with a large firebox so I can cook with wood too. Some day I’ll be shopping in Houston! :wink:
