Thanks for the help guys, if I had cooked it the way I planned, I'd have had one heck of a big piece of jerky on my hands. It will be grill bound at 6:00 am Sat. morning. At the end of the day maybe my wife will believe what I told her long ago: Cooking is little more than science. Grilling, however, pure art. Thanks to fellow artists like yourselves we all grow with the grill.
