Last weekend I opened up MMM again and decided to try the Lemon Soy London Broil
with a flank steak I'd picked up.
I'm pretty sure the London broil marinade my mother used was mostly A-1 sauce, and there's none of that here!
The recipe lists a 2-4 hour marinate time so I split the difference at 3.
Medium-high direct heat did the trick.
I used the poke test to determine the doneness and thought it might be more done than it was...but I'm not complaining!
Even though flank steak looks like it could be pretty tough, when sliced across the grain it's really pretty tender.
We could really taste the lemon and soy flavors and using whole coriander seeds gave a kind of corned beef effect when they were bitten. Good stuff! The potatoes are from an America's Test Kitchen
