Were these from some of the primals used for your dry-aging?
These are standard issue at Restaurant Depot. They have several cuts including short rib and boneless. I think these are often referred to as "English Cut" but there, they are just labeled "beef ribs".. Angus of course.. About $5 and change per lb.
