This is how we do it in the Panhandle of Florida. My son and his girlfriend recently visited and went fishing.

Girlfriend caught one too

stuffed with a bouqet garni of Thyme, Tarragon, and oregano, with a lemon compound butter.

served with Maque Choux. Stewed fresh corn with shrimp, Tasso, and tomatoes serve over rice.

Thats how we roll.

That is soooo not the Panhandle of Texas I was expecting when I opened this thread. Insanely jealous of the fresh fish. Nicely done!

+1 - you don't normally see a lot of fresh fish like this on the board, so those ones are extra-special. :D
Unlike propane, you'll never wake up scorched and naked in another county because you mishandled a bag of briquettes.

Bay scallop season has started. They are small and sweet. Hard to grill without a grill pan or something because skewers split them, but you better believe I'll have some grilled soon.
