Previous Cooks Leftovers Gone Burrito

It was time again for another one of those "kitchen sink" leftovers dinners. And everything pointed to one big massive burrito. Do you ever find that sometimes, leftovers make for some of the most stunning tasting and memorable meals? So it is with me on this one. I'd repeat it in a heartbeat.

Here is all that went into the huge tortilla--homemade refried red beans, chorizo, pulled chicken, orange rice, sauteed red bell peppers, chopped onion, chopped chipotle, and globs of pico pica hot sauce (my fav sauce for burritos), and topped with crema mexicana and black olives (sorry Toby, but at least they're easily cast aside). That looks like an awesome burrito, you're pictures are getting a lot nicer too my friend!

Love those orange slices in the back too.. Good work by you.

Steve, I am especially fond of those oranges too, as they come from my own backyard.

Put a significant dent in it, that's for sure. I sillily had those l.o.'s stored in oversized glass pyrex bowls. I made some tostadas compuestas tonight that dented the fridge all the more.

Why thank you, Chef Dyal! :D One thing that I really appreciate about Mexican style cuisine is that I can get a whole lot of flavor for a minimum amount of money.
