Probably because most pizza place would shortcut it and it would be crockpot style pork and lowsy.
Yeah - but that's not limited to just pizza joints. There are a dozen restaurant chains in my neighborhood that serve "pulled pork" and at least double that number of independent restaurants. Not a single one of them uses a smoker - it's all crock pots and liquid smoke. (And darned if that doesn't give me an idea for another poll...)
That's why I like Dyal's masterpiece above - nice work!
