Where can I find true baby back ribs like those sold in restaurants? The ones in the stores seem to be St. Louis cut spare ribs advertised as baby backs.

If you're referring to standard loin back ribs, a butcher shop or a grocery store that still cuts meat would be your best bet, and if there's a farmers' market in your area you might be able to find a small-scale/artisan producer as well.

As I understand it, the true "baby backs" are mostly imported, often from Denmark.

Good luck!

I'd agree. A local butcher is usually the best choice, as a lot of supermarkets have their baby backs cryovac'ed and "enhanced" - meaning they've been injected with brine. You can often get much smaller ones from a good butcher, but the really dainty ones are indeed from Denmark for the most part, and they're quite pricey.
Unlike propane, you'll never wake up scorched and naked in another county because you mishandled a bag of briquettes.
