had these two saved back to make into something interesting. i thought id make one into pastrami and leave it as corned beef. corned venison is really good.

oops had the wrong brine pics posted, ive done this before with other cuts of deer meat, soak in water to leach out as much blood as you can, i soaked for 3 days changing water as often as i could. i left the silver back on for now, after its cured it pulls off pretty easy. im using the corned beef cure from "The sausagemaker.com" a 5 lb tub makes alot of corned meat. curing time is 24 hrs per 1 inch of meat, i also injected the brine but im not cutting any time off for curing.
they were in the brine alittle longer then planned (9 days) work had really busy this week. i cut some pieces off and about to cook them to see how they turn out. results later
