I traveled through Lafayette, LA earlier this summer and picked up a package of homemade boudin balls. When I got home, I tossed them in the freezer and kinda forgot about them. Anyways, I found them this weekend and thawed them out. Tonight's dinner consisted of grilled boudin balls and some Slovak's jalapeno sausage. I also deep fried 5 of the boudin balls for something a little different. I liked the fried version better, but my bride liked the grilled. I do know that I cooked too much, though...

Mmmm...boudin! I haven't had any for a few years and this thread's making me hungry!
TT, did you put any kind of batter or breading on them before they went into the fryer?
I didn't, but would have probably worked better if I had done an egg wash, bread crumb or cracker crust. They were falling apart when done without it. Still tasty with a spoon though.
