I have been asked to provide 35 pulled pork sandwiches and 35 brisket sandwiches for a party at work. I am also bringing chips and baked beans for about that many as well.

My question for you experienced caterers on the board is how much brisket and pulled pork? Do you guys have a rule of thumb you go with for pre-cooked weight for brisket and butts and beans (assume 1 cup servings?)

Any help would be greatly appreciated.

1/2 to 3/4 lb per person after cooking.
you will lose about 1/2 the weight of meat after it is cooked.

for 30 people i would buy 25-30lbs of meat to be on the safe side.
you will have leftovers.
better to be safe than sorry when it comes to catering.


1lb pre-cooked = 1/2lb cooked.

Personally i think its closer to 25% - 50% loss. And i think that 50% loss is quite high. I did #16 of pulled pork about a month ago and i ended up with about #11-#12 after cooking.

Just my opinion though 8)

If you've got the capacity on whatever you're using to cook, I'd aim "high" from a quantity standpoint. Nothing wrong with leftovers, lots wrong with running out.
