Barbacoa - Ardmore, PA

A few miles from my house in the Philly burbs. DAYUM !! These guys do it great. The Peruvian chicken is the killer dish. St. Louis ribs were excellent as well. If I didn't make my own better, I'd rave about the brisket as well, but I don't have to devote 12-16 hours to order theirs.

Those are definitely pretty reasonable prices; lower than what I'd expect in a city like Philadelphia.

There was a Peruvian chicken place here in Madison for awhile but it closed before I got a chance to check it out. Based on what I've read it's a style of cooking I'd like to try.

It is brined 12 hrs. A little salty, but actually JUICY .. not just moist (especially the breast meat.) Great job on ribs and brisket too (smoked, whereas the chix is cooked on a rotiss.)
