Last weekend I watched this episode of Simply Ming and he and his guest had some interesting observations on the use of salt. I don't know if it's online yet but if it happens to turn up on a PBS or Create channel I think it's worth watching.

That would be worth watching... Ming is a great Chef and Ruhlman is co-author of charcuterie-- the ultimate use of salt. :)
