I want to thank everyone here for their advice for smoking my first-time pork shoulder butt roast this past Friday night/Saturday morning. The results were just great!
I did have some trouble with the keeping the temperature up Saturday morning. It was the case of too little of airflow and the ashes. I do need to do the strap mod thing and get a charcoal basket. I ended up having to clean out the ash tray and starting with new charcoals ... once I did that, I had no further temperature issues. Everything turned out so tender ... the pork butt literally fell apart when I took it off the grills.
I started of my pork butt with a generous slathering of yellow mustard and my favorite rub and let it sit in the frig for the day ... and my brisket with worcherstershire sauce and the same rub.
Then got my CG Pro up and going. I didn't notice it at the time, but you can see that I also put the initial round of charcoal too near the vent openings ... which caused me problems later on.
And the meat is on. My CG is about five year old and well used .. as you can tell!
