My stomach was growlin' at me this morning. Was originally going to make a breakfast burrito, but I used up all my bacon on the moink balls that I'm going to smoke up later for the game. Then it donned on me...I have a freezer full of smoked bologna!

Fried up a slice of the bologna along with an egg...put it on a thin toasted bagel with american cheese and chipotle mayo...

Deeeelicious!!! 8) So good I ate two.... :oops:

Smoked bologna would be a perfect substitute for ham or Canadian bacon. I'll bet it'd make some excellent Eggs Benedict, too.

Gotta shop - no eggs, no cheese, haven't bought bagels for a while. Have bologna and store bought burger buns - just buttered two, couple slices of bologna, stuck under the broiler, munching as I browse. You made me hungry and jealous.
