Playing with Fire in LA


Can man live on barbecue alone? Absolutely. But women? Maybe not. In any case, Steven’s assistant Nancy Loseke, lobbied for sushi and a salad when she and Steven converged on her quasi home turf, Santa Monica, California, last Saturday. It was time once again for their quarterly business meeting.
That’s how they found themselves at Tengu, a newly-opened sushi restaurant with enviable views of the Pacific Ocean and the famed Santa Monica Pier. (Tengu is named after the god of mischief, joviality, and feasting.)
But you can’t keep Steven away from fire for long, or from people who play with fire. He was especially intrigued by Chef Johnny Chang’s twist on planking. He watched as Chef Chang layed a pristine slab of albacore tuna on a heat-seasoned cypress plank and fired it with a kitchen torch. The barely seared tuna, now subtly infused with cypress flavor, was sliced and drizzled with ginger sauce. Brilliant!
