4th of July party snacks on Dads gasser.
This is a modified version of Huli Huli Chicken
First I Frenched the chicken legs.
Then maridated with 2cups of dole pineapple mango juice, 1cup soy sauce, 1cup katchup 1 cup raw cane sugar, and table spoon each of garlic, and onion powder. Marinated overnight. saved about a third of the sauce to sauce on the grill.
Grilled and served pool side. I just turned off the grill and let them rest for a few minuets then let people grab them by the bone right off the grill. Good times.
Little pig, no head or skin. A gift from my little brother. It was an accidental cross bread of Vietnamese pot belly (pet) pig, and Blue butt (meat) pig.
Cuban style, but with a little smoke. Rubbed with Mojo Mama original dry Mojo, and injected with Publix liquid mojo then marinated overnight. used the SFB to get the temp up to 325 Using Kingsford competition briquettes, and a few chunks of hickory. cooked for about 4 and 1/2 hours, then let rest for 1/2 an hour. had a great bark, and super moist inside.
Served with Cuban bread, Black beans and yellow rice, and sweet plantains. And needless to say mojitos to wash it down.
