Halved and pitted several cherries. Then pureed them in a blender. Added sugar, vanilla, sour cream and a little lemon juice.
Brought to a very low simmer. Halved a banana.
Grilled the banana cut-side down then flipped over and topped with a little brown sugar. A little cherry wood was added to the coals just for ambiance.
Close the lid on the grill to caramelize the sugar. Then plated and topped with the cherry puree.
This is one of the rare times I actually used a spatula on the grill. Did want to risk loosing the soft bananas. The banana was sweet while the cherry puree added a tart tang, but not too tart.
Note to self: Next time I’ll not cook the cherry puree and keep it a fresh sauce to see which I like better. And maybe the sauce will retain a little more red color.
