Recipe Notes

  • Yield: 4 sandwiches

Ingredients

  • 2 12-inch baguettes cut in half lengthwise and split while keeping both halves connected
  • 4 4-ounce smoked sausages (I like Artisan Meats for their Käsekrainer)
  • 4 organic eggs
  • 4 ounces sharp cheddar cheese, thinly sliced
  • 1 tablespoon honey
  • 1 tablespoon hot mustard, such as Löwensenf hot, or Maille Dijon
  • Salt and pepper

Recipe Steps

Step 1: Direct grill your sausages over a medium fire. While your sausages are cooking, grill your baguettes, and whisk your honey and mustard together.

Step 2: Once your sausages are done, place each one in a toasted baguette. Heat a skillet with oil on the grill and fry each egg sunny side up. While the eggs are cooking, brush each sausage with your honey mustard mixture. Place a slice of cheese on top of each. Top each sandwich with a fried egg, season with salt and pepper, and serve immediately.
