Howdy folks !

Heres our easter Dinner, Pork Tenderloin stuffed with Spinach, goat cheese, Texasbbqrub and "bears garlic", then wrapped with bacon and smoked til 145 internal.
Then i wrapped it in blanched savoy cabbage, put puff pastry all around it
and baked it till the pastry was done.

Mighty good eats.

I´m cooking a 6,5 pound pork butt on the side, too. It´s gonna cook all night and will hopefully be finished by noon tomorrow.

interesting technique , i would have never thought of smoking something then baking it inside dough

Aaaaaah, the smell of pork and hickory in the morning :D

Its 7.40 am and the pork is at 174 internal.
