Grilled Buffalo hot wings - italian effort

Yesterday I made my first try on hot wings.
Chicken wings rinsed and blot dried.



Simple rub made by...
Paprika;
Garlic powder;
Salt;
Freshly ground black pepper.


Making marinade...
Butter, lemon juice, hot chili flakes



Pour the wings with the marinade for at least 4 hours



Better if wings are submerged by the marinade



Set up the Barby over medium high fire and put wood chips. I used beech chunks.



Indirect cooking for about 40-50 minutes



A lovely crips skin...



In italy I can't find Frank's hot sauce then I used another Brand...



Butter and hot sauce and coat the wings. A very thin layer of sauce...



And this was the result.
Celery ribs, blue cheese sauce (I made it using gorgonzola) and wings....

What's the verdict?:-D
Does anybody come from Buffalo??

I have that feeling of deja vu.

They look BETTER than Buffalo !! I'll have to try some oriental hot sauce one of these days !! I'll bet the ginger was a nice touch.

I tried mailing my friend in Paris a bottle of Frank's but it cost almost $30.00 to mail a $4.00 bottle. I'll have to tell him to check out the Asian markets.

I also use Gorgonzola almost all the time here in place of Bleu. It is less than half the cost of even Danish Blue. French Roquefort costs more than Prime meat.

So what did YOU think ??? They looked nice and crispy. Traditionally, Buffalo wings are deep fried, and too often they are served soggy. Drying them as you did, and then grilling, I'm sure made the skin heavenly !!!

Another thread with some amazing looking wings!

They look pretty good to me and I take my wings very seriously. I've made many hundreds of pounds of them over the years and sampled them at many places including the original Anchor Bar.
You should be proud of what you put together.
