Chicken wings rinsed and blot dried.
Simple rub made by...
Paprika;
Garlic powder;
Salt;
Freshly ground black pepper.
Making marinade...
Butter, lemon juice, hot chili flakes
Pour the wings with the marinade for at least 4 hours
Better if wings are submerged by the marinade
Set up the Barby over medium high fire and put wood chips. I used beech chunks.
Indirect cooking for about 40-50 minutes
A lovely crips skin...
In italy I can't find Frank's hot sauce then I used another Brand...
Butter and hot sauce and coat the wings. A very thin layer of sauce...
And this was the result.
Celery ribs, blue cheese sauce (I made it using gorgonzola) and wings....
What's the verdict?:-D
