Looking at your pic, I think the next time I do wings I might pile the coals in the middle and put the wings "in the round) around the coal pile. That might give me more room for the crisping process...

I do put them over the coals at the end, but only for a couple of minutes, turning them constantly. The coals are burned down a lot by that time. I usually end up dumping at least one wing into the coals by rolling it off of the grate. This was the first time in a long time I haven't had a "roller!"

We eat wings at my house about once a week.
