Pitt Ham

What is a pitt ham??

The same as pit beef or turkey...
A mainstay of BBQ.
A piece of meat, in this case a ham, thats slow cooked by smoking.
Everyone has their own favorite and their own favorite recipe and or vendor.
Very common at fairs, festivals, picnics, and ballgames.
I prefer pitt beef myself. (on a potato roll with horseradish sauce.)

I was driving home and had this ringing in my ear. Did someone just mention potato rolls? Why, yes, I believe they did.

A little more clarification is probably necessary. Most of the time when we think "Ham" we are thinking of a product. Speciffically the rear leg of a pig that has been brined, smoked or dried. But it also can refer to the same cut uncooked. That is what pit ham is made from. So you shouldn't picture an easter ham cooked in a pit but more like an alternative to pork shoulder.
