Hi all, boy this thread has gotten really good. My thanksgiving turkey came out great. Very moist and sweet. Wings and legs were a little overdone but I'll chalk that up to the learning curve. Should have foiled them about halfway through. All told though, got many compliments on the bird.
DC 10, interesting thought about the pea gravel. Where inside the smoker are you using that? What brand of smoker are you using? Also thanks for the heads up on the insulator blanket. I'll have to check out Cabelas and get one. I really want to use the smoker in colder weather but find it tough to keep the temps up when it's really chilly.
