How 'bout this? Took jumbo freshwater prawns, injected them w/ Tony Cachere's Butter Jalapeno, sprayed them w/ EVOO, and sprinkled on some creole seasoning. Skewered and grilled direct over charcoal with a small smoking hickory chunk. Lez le bon temp roulle!! Does anyone know authentic New Orleans BBQ shrimp?

That sounds great!
But the best part of New Orleans style shrimp is the sauce and the french bread for dipping! Add that on the side and I think you've got a winner.

Side note: How easy was it to inject the shrimp, I'd think that would be tough/impossible?

I've been to Nawlins and that barbecue shrimp is one of my favorite things and that recipie looks pretty close. Juist make yourself some garlic bread on the grill for dipping in the sauce. I can't stress the importance of that part. Garlic bread in the sauce RULES!

Try the beignets for breakfast/desert too.

All you need now is to ditch the beer and mix up some hurricanes!

2 ounces light rum
2 ounces dark rum
1 ounce grenadine, or passion fruit syrup
1 ounce fresh orange juice
1 ounce sour mix, or fresh lime juice
1 teaspoon superfine sugar
Orange wedges, for garnish

Mix all the ingredients in a cocktail shaker, and shake to dissolve the sugar.
Add ice cubes to come halfway up the sides of 2 tall glasses.

Divide the mixture between the glasses. Garnish each with an orange wedge and serve with a long straw.

Take some beads and you'll be all set.
