I've seen this only in northern Maryland (Cecil County/Elkton Area) and nearby Delaware ...called Lower Delaware by locals and (S)lower Delaware by those out-of-state,
The basic premise is to direct grill a roast, and carve off hunks as it cooks, toss in BBQ sauce and slap it o a bun and serve. The upside is, you always get some burnt edges (a BBQ MUST), and also some tasty rare beef depending how deep you carve ....
I have not tried it yet, but Camden Yards (in Baltimore) has a Boog Powell Pit Beef consession .... I guess it beats the $5.00 hot dogs we eat in Philly .......
