I suggest smoking with a rotisserie! Typically I like smaller birds (around 12#) and find them tastier and easier to handle not to mention, multiple smaller birds give you the opportunity to try 2 different things at one time and don't take as long to cook. Generally you cook turkleys about 15 minutes a pound @ 325 but it varies depending on the temp you cook at. Thigh temp should be 180 degrees (well 170 for me

) however you decide to cook yours. I strongly suggest injection marinating too; absolutely love it! Steve has a few good base recipes that are good jumping off points in his Marinades,Rubs book. No idea how much gas as I use strictly hardwood for the big day. Usually oak and some kind of fruit wood for my recipe.
