Got this idea off another forum. Smoked them up last night. Crazy good! You take half a jalapeño, fill it with a cheese mixture, wrap a skinless boneless chicken thigh, season with some rub, wrap in bacon, smoke them indirect, and base periodically with the sauce of your liking.

That's really neat! And with a big-enough chicken thigh the unsuspecting victim won't know what's inside until the first bite... :twisted:

Awesome! I think using a whole jalapeno instead of the slices I used last night for my white wings might have helped me from losing cheese during the cook. Gonna try these for sure.

Thanks, ladies and gents! sroach, they weren't hard at all to wrap in the chicken thighs. Just laid the cheesy jalapeno face down on one side of the thigh, then folded the other half on top.

I love this idea and may use it for the next "meating" in a gentlemen's grilling group I belong to. I've done a ton of ABTs and even armadillo eggs, but never thought of wrapping them in thighs instead. Thanks for the inspiration.

Dyal,

What is the ratio of chicken thighs to jalapeños. I'm just trying to figure out how much to buy. The pkgs of boneless skinless chicken thighs at Trader Joes generally contain 4-5 thighs, so I'm guessing I'm going to put some in the freezer for future use.

@jstewart, each stuffed half of one jalapeno goes into one skinless boneless chicken thigh. So the ratio is one whole jalapeno to two skinless boneless chicken thighs.

Dyal - those look great! Sort of like the Serbian Chicken Bundles in Planet Barbecue, but with a bit more kick from the jalapenos. :D
Unlike propane, you'll never wake up scorched and naked in another county because you mishandled a bag of briquettes.

Thighs are a bit more challenging to flatten because they're more than one piece of muscle, but I don't see why not.
