Now that the Easter weekend is almost upon us, is anyone grilling or smoking for the holiday? I have this year off but will still be enjoying (I hope) an oven-cooked ham.

Oven Roasted Rib Roast, probably 5 bones, some baked ham, mashed spuds, Irish Soda Bread and a new dish sauteed fennel with caramelized onions, garlic and bacon.

I'm in charge of one monster leg of lamb in a yogurt marinade, fava beans, crushed potatoes and green beans in marinara with some bacon. Ordered the lamb today. Will do this over a big fire.. In the rain. And maybe thunder even. How Hemingway-esque.

We just finished eating a big ham so no ham this year.

The popular vote is for brisket this year.

Have a 14# in the frig getting ready for the weekend :D
