WOOD PELLETS

What do you think if I took pellet stove pellets and soaked them in apple juice and dried them out? Why wouldnt that work?

to use as fuel or a supply of smoke?

Does the package list the kinds of woods that're used for the pellets? I'd start there, and it might not be a bad idea to contact the manufacturer with your question in case some sort of additive is used to help the burning process.
