Decided to smoke-roast a few spatchcock chickens. Used cherry wood, and put the tray of veggies underneath to cook in all the smoky drippings:

You're going to be eating well for a couple of days now! :wink: Did you add any liquid to the vegetables or was the pan dry prior to the drippings?

I did some chicken leg quarters yesterday and they didn't turn out as nice as your birds... :(

No added liquid. The drippings eventually filled it about halfway, which ensured some tender veggies.
