Yesterday I cooked a 6 1/2lb Costco Brisket on my old Grand Hall (Sams Club) gas grill. After applying alight seasoning of adobo, onion/garlic powders, black pepper and thyme, the meat was placed in an aluminum steaming pan with some red wine and water. At 3PM, the pan was placed in the gas grill, on top of aluminum covered bricks over medium heat and cooked uncovered for 2 hours. At 5PM I foiled the pan and the brisket cooked covered for the third hour. At 6PM, I shut the heat and the brisket sat covered on the grill for an hour until dinner around 7PM.
No smoke for this brisket. It was basically roasted on the gas grill, red wine and water was added just to keep the pan and the bottom of the brisket from burning. After 4 hours in the pan, 1 of them without heat, the end result was one tender and moist hunk of beef.
