OK... this one wasnt grilled, but the reason I share it is because it is low carb and one of the most flavorful I have had. I am not sure where the wife got the recipe, but I am sure glad she did.

3T Olive Oil
2 med Zucchini, chopped
1 med onion, chopped
3 cloves garlic, crushed
1 1/2 # gr beef
2 T fresh parsley
1 Egg
3/4 C grated parm
1 t salt
1/2 t pepper

The olive oil is used to saute the zucchini, onion, and garlic until softened, but not cooked through and allowed to cool
once cool mix everything in a large bowl
we like to arrange the loaf on top of some sliced onions on a sheet pan, but the recipe calls for a loaf pan-- up to you.
bake at 350 for 75 to 90 minutes until done

5 servings has 2 net carbs and 29 grams of protein each. I think we got 6 servings from it... 2 dinners and 1 lunch each.


I have to admit at this point I was somewhat skeptical.
