3T Olive Oil
2 med Zucchini, chopped
1 med onion, chopped
3 cloves garlic, crushed
1 1/2 # gr beef
2 T fresh parsley
3/4 C grated parm
1 t salt
1/2 t pepper
The olive oil is used to saute the zucchini, onion, and garlic until softened, but not cooked through and allowed to cool
