Green Chili Sour Cream Chicken Enchiladas

It's been awhile since I've made something new on the Egg but today I figured I'd make the whole meal on the Egg. I started off with some chicken thighs and put them on the Egg at around 350

Then once those were done we shredded them and put them in a tortilla with cheese and lined them up in the dish

I then added the sour cream green chili mixture

Then topped them off with some more shredded cheese. I mean I added lots of cheese cause well....I love cheese

After about 20 minutes on the Egg I pulled the dish off. Would've liked longer but everyone was getting hungry.

These were so yummy! I probably would've liked more heat to the dish but it was very tasty!

Oh man does that look good!! Nicely done... Now I'm craving Mexican food. Dang it, Eddie...now I'm going to have to make something Mexican tomorrow night.

I've never been much of a fan of enchiladas, but yours look mighty darn tasty. Nice job.

Yeah it was glass...I try to wrap those in foil to avoid any of the smoke getting on them...
