I am cooking 6-8 racks of ribs for a function this Saturday at 1PM. I've never done this many at one time before. I have a Weber Bullet smoker and gas drill at my disposal. My plan was to smoke 3 racks at a time on the top rack for about 30mins-1 hour, wrap them in foil and finish on the gas grill or in the electric oven in the house for another 90mins-2 hrs. .........ooorrrrrr start them in foil and finish on the smoker. Any comments about using this process?
I am contemplating cooking them the evening before. Any opinions about that? Thanks.
