I came up with a Recipe for "Smoky Potato Salad" recently ( I'm always tweaking the ingredients), Everyone who's tried it has asked for more- it uses canned Chipotles for the smoky taste. Depending on how much you use, it'll range from Smoky to Hot!!
SMOKY POTATO SALAD
2 lbs Small red potatoes
4 eggs, hard boiled and chopped
2T Sea salt, divided
1 Cup chopped red onoin
1 to 2 T Adobo sauce from a can of Chipotles
1 Chipotle chili. Minced, from the can (seeding the chili makes it milder)
1 Cup Mayo
1 Bunch fresh Cilantro, Chopped
Boil Potatoes in water with 1T sea salt until tender. Drain and cool until easy to handle. Combine Onion, mayc, adobo sauce, minced chipotle, cilantro and 1 T sea salt until blended. Cut potatoes in half, add eggs, and toss with the dressing.
serves 4 to 6
I added Black beans once ( for a more southwestern flavor ). I loved it, but my wife thought it was better without them. And if you use regular table salt in the recipe, use a much smaller amount.
