The local market had a screaming deal on lamb this week, only ate it twice before in resturants. Fired up the green rocket, used a simple dry rub and dumped some apple chunks in the pan. Tasted wonderful, so good the kids(9&12) never asked what it was and I never told them. Wasn't exactly sure what color it was supposed to be when down, so I over cooked one as a test. Still not entirely sure. :? No one sick this morning though! It's something I'll do again for sure.

Thats great! Congrats. I love lamb, but the price does limit my consumption. As for doneness lamb is like beef. People like it all ways. I suggest cooking it the same way you like your steak. Personally I like my steaks medium rare and my lamb just a shade closer to rare.
