Do you put them over top the coals when they are done to crisp the skin. I've done Louisville Wings on my Weber Kettle with pretty good results. The only problem is I usually throw about 6 out per batch because I burn them during the crisping process. I set the kettle up with the coals on the side and the wings in the middle. Looking at your pic, I think the next time I do wings I might pile the coals in the middle and put the wings "in the round) around the coal pile. That might give me more room for the crisping process...

I do put them over the coals at the end, but only for a couple of minutes, turning them constantly. The coals are burned down a lot by that time. I usually end up dumping at least one wing into the coals by rolling it off of the grate. This was the first time in a long time I haven't had a "roller!"
We eat wings at my house about once a week.
