Q, I checked out Del Frisco's online but there doesn't appear to be a Louisville location. Did it shut down, or is it independent of the chain?

According to their website they are the original. I cannot attest to that, but interesting nonetheless.

My all time favorite "Billy Crews Dining Room" in El Paso, Texas. It has been several years since we lived in the area, but it remains a delight and hopefully I will get back one day.

1200 Country Club Rd, Santa Teresa, NM 88008

Just across the state line.

Manny's Steakhouse in Minneapolis, MN is the "real deal." If you haven't been there, it's time for a road trip!

One of my favorite, little known, high end chains is Shula's. I've eaten at the one in Philly a dozen times and it is always excellent.

I've tried several "Shula's" and have been fairly disapointed, EXCEPT for the one in Philly! They are MUCH better than the rest of the chain that I've tried so far!

I just returned from a Caribbean cruise and must communicate and articulate information about the absolute best steak that I've ever consumed. Granted, this steak was NOT from a "steakhouse", but I felt that it warranted attention as it was FANTASTIC!!!

I was aboard the "Majesty of the Sea", on a Royal Caribbean cruise from Miami to Nassau, Coco Cay, and Key West, then back to Miami. One evening, my wife and I, along with another two couples we were with (and two couples that we met in the private dinning room), ate at the "Chef's Table". There was an "extra" expense for this dinner, but oh so worth it!!! As part of the five course dinner with paired wines (the fourth course in fact), we were served a "Slow Roasted Beef Tenderloin" that was so tender that I have NO idea why they had a steak knife on the table. Of course I got mine "rare" and it was perfectly cooked. I'm not much into dry red wine, but it did go pretty well with the meat.

As previously indicated, this is NOT a steakhouse, but if anyone ever has an opportunity to experience this treat, I DEFINITELY recommend that you jump on it!!!

That sounds great! Did you identify any specific flavors, like garlic or rosemary?

I wonder if it was Prime grade.

Nothing stood out in particular (except possible a wee bit of pepper), it was just a great balance of flavor.
But the tenderness is what I couldn't get over! Not mushy at all, just practically fall apart tender - yet RARE!

Sous Vide?

About the only way a massive kitchen
like those on cruise ships can have meat ready
for promt service.

The meat can hold for hours without
any degradation in quality.

Then a quick flip in the grill
or under the broiler for color.
