The best barbeque that I have ever had is wandering around the World Championship Barbeque Cooking Contest in Memphis. This event pits (literally) the best in the country [and sometimes the world] against each other. Everyone wants to win. While Saturday is devoted to pork - shoulders, ribs and whole hog - Friday is anything But and you can find nearly anything that can be barbequed being cooked somewhere. Even though there are many restaurants around the country that produce great barbeque, none of them devote the energy and expertise into their products as the cooks do during that weekend on the banks of the Mississippi River. No matter where I am, the third weekend in May will find me in Memphis.
