Hope everyone had a good holiday. Steven spent his reading galleys for the 10th anniversary edition of The Barbecue Bible. And planning his next research trip for Planet Barbecue—a 5 week, 10 country swing through India, Australia, and Asia. Speaking of research trips, Steven’s last blog featured a Yucatecan grilled fish specialty called tikin-xik. The fish is marinated in recado rojo (a pungent, red, annatto seed marinade), then grilled over charcoal. The featured restaurant was La Pigua in colonial city of Campeche.
