It’s official! Steven Raichlen is bringing Barbecue University to the luxurious Broadmoor resort in Colorado Springs. The resort (longest-running consecutive winner of both the AAA Five-Diamond and the Mobil Travel Guide Five-Star awards) will host two back-to-back sessions of BBQ U next year on June 1-4 and June 4-7. The theme for Barbecue University ™ 2008 is “Primal Grilling”—based on Steven’s new TV show, which debuts on PBS in May. The recipes are all new (and so are a lot of our grills), but rest assured: the in-depth, technique-driven curriculum hailed by the Food Network as “the best barbecue experience in America” will be the same. So what’s on the menu? The classics, such as pulled pork (this year cooked Yucatan-style—cooked in banana leaves in a pit); whole Texas-style brisket (slow-smoked until it’s tender enough to cut with a fork), and ribs in the style of Kansas City, Australia, and Chile. Innovations, such as tequila grilled oysters, smoke-roasted raspberry crisp, and Steven’s uptown twist on a “cheese steak” (whole beef tenderloin stuffed with grilled peppers and provolone cheese).
