You can grill what?

Steven has grilled a lot of strange things over the years and tasted a lot more. But this may be the strangest of all: sea cucumber ovaries—pressed into a cake that resembles a triangular poker chip. The bearer of this singular gift was one Kumahachi Moreno, a Japanese TV chef famous for singing his recipes on television, and when he came to visit Steven, he brought other strange foods to grill, including burdock root, red bean paste, and pickled cod roe. The first went into a grilled vegetable salad; the red bean paste was used to stuff smoke-roasted apples; the cod roe went atop grilled oysters and was better than it sounds. As for the sea cucumber cake—well, it tasted like a grilled briny potato chip and it, too, was a lot better than it sounds.
